I don’t know about you but I just LOVE rice paper rolls!

 

I eat them all year round, and the best thing about these babies is that you can put just about anything you want in them!

 

Gather your favorite ingredients and just wrap and roll! 🙂

 

 

Rice papers are made from rice and water and can easily be found in any oriental supermarket, or the ethnic section of your favorite grocery store. Usually, they are round and come in different sizes but you can get them in squares as well – yay!

 

They are quick, simple, and easy to use – just saturate one sheet by dipping it in some warm water, then place it on a tea towel and wait a few seconds for it to soften. I like to place them on a tea towel so they don’t become too soft. They might stick slightly to the towel when rolling but I find they adhere better and keeps all the delicious goodness neatly tucked in place.

 

I also quite enjoy the chewy texture of the paper. Don't oversoak otherwise they lose the stickiness. You can also run a sheet under your kitchen faucet, lay it on a cutting board and it will soften in no time.

 

 

Yesterday I made some rolls utilizing my leftover salmon from the night before. On a whim, I decided to add some miso paste and olive oil, and boy did they hit the spot!

 

 

These were quite filling …. I had them both for dinner and was sooo satisfied!

 

Oh, and they also make a great lunch or on-the-go snack. Very portable and great for picnics too!

Salmon Salad Wrap

Ingredients
  

  • 2 sheets rice paper (22cm x 22 cm)
  • 1 cup cooked salmon, flaked
  • 1 tsp organic miso paste
  • 2 tbsp warm water
  • dash extra virgin olive oil
  • mixed greens, handful
  • tomato, diced
  • onion, thinly sliced
  • cucumber, thin strips
  • carrot, thin strips
  • cilantro
  • dash black sesame seeds

Instructions
 

  • Dilute miso with 2 tbsp warm water
  • Add a dash of extra virgin olive oil to miso
  • Mix together miso and flaked cooked salmon
  • Arrange all ingredients within arms reach
  • Dip a rice paper sheet in warm water and place on a tea towel – allow to soften (about 30 seconds). You can also run rice paper under the tap if you are making just a couple
  • On rice paper, assemble all ingredients on the side closest to you
  • Gently lift softened rice paper over in the direction away from you to cover your filling and fold in both sides
  • Roll gently but firmly
  • Cut in half. Serve and enjoy!

Notes

You can add as little or as many veggies to your roll. I recommend that you start small as the rice paper sheets will be harder to roll and might break if the filling is too big.
